Learn about an ancient tradition in a new twist. Welcome to Björksodan's beautiful farm in the heart of the forests of Småland. We tell you about our business and production and show the craft how it is done when birch sap becomes Birch soda. We offer tasting of Björksodan's different vintages, in our farm shop where there is always a forest spring! Follow nature's own bubble, from tree to bottle.

About Ängabackens Björksoda

Ängabackens Björksoda from Sonarp south of Jönköping is a non-alcoholic, naturally sparkling drink made from pure birch sap. Birch soda is small-scale and artisanal produced by bottle fermentation in earthen cellars. The company is also investing in meal tourism since spring 2023, welcoming German tourists as well as local businesses and organizations.

Birch soda is a luxurious non-alcoholic alternative to wine and should be enjoyed cool as a meal drink. Birch soda is produced by three women at the company Lanthandeln Sonarp AB, who both harvest and process birch sap at their farm in the village of Sonarp.

With its freshness and genuine taste, Björksoda is very food-friendly and goes well with many different kinds of snacks and dishes, preferably with things that are low in fat like cheese and charcuterie, strong food or seafood. Birch soda is served chilled but not refrigerated rind, around 6—10 C°. Birch soda is unpasteurized and has a natural sediment at the bottom. Dry and crunchy, with only 0.23 g of sugar per 100 ml.

**For the second year in a row, Ängabackens Björksoda from Sonarp has been selected as one of 19 companies to represent Sweden at the Grüne Woche World Fair in Berlin. The fair opens on Friday, January 17. Minister for Rural Affairs Peter Kullgren will be present this year when the Swedish stand is inaugurated with Björksoda, the dry non-alcoholic birch sap bubble. **
